Description

Indulge in a delicious twist on classic cheesecake with this Puff Pastry Strawberry Cheesecake. The crispy, flaky puff pastry pairs perfectly with a rich and creamy cheesecake filling, topped with fresh strawberries for a perfect dessert.

Ingredients

  • 1 sheet puff pastry, thawed
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 tablespoon lemon juice
  • 1/2 cup heavy cream
  • 1 tablespoon sugar
  • 1/2 teaspoon vanilla extract
  • Fresh strawberries, sliced for topping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roll out the puff pastry on a lightly floured surface to smooth out creases.
  3. Cut the puff pastry into squares (about 4×4 inches).
  4. Place the puff pastry squares on a baking sheet lined with parchment paper and bake for 10-12 minutes, or until golden and puffed.
  5. In a medium bowl, mix together the cream cheese, powdered sugar, vanilla extract, sour cream, and lemon juice until smooth and creamy.
  6. In another bowl, whip the heavy cream with the sugar and vanilla extract until stiff peaks form.
  7. Gently fold the whipped cream into the cream cheese mixture.
  8. Once the puff pastry squares are golden and crisp, remove them from the oven and allow them to cool.
  9. Top each puff pastry square with a generous amount of the cheesecake mixture.
  10. Add fresh sliced strawberries on top and serve immediately.

Notes

  • Make sure the puff pastry is fully thawed before rolling to avoid cracking.
  • Use chilled mixing bowls to help the cream whip faster.
  • Serve immediately for best texture and freshness.
