Description
These Pumpkin Cheesecake Bars feature a buttery graham cracker crust topped with a creamy, spiced pumpkin cheesecake layer. Perfectly portioned and full of fall flavor, they’re ideal for holidays or any autumn gathering.
Ingredients
- 9 graham cracker sheets (1¼ cups crumbs)
- 3 tbsp granulated sugar (for crust)
- 5 tbsp unsalted butter, melted
- 16 oz cream cheese, softened
- ¾ cup granulated sugar (for filling)
- 1 tsp vanilla extract
- 2 large eggs
- ¾ cup canned pumpkin puree
- ¾ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ⅛ tsp ground cloves
- ⅛ tsp ground ginger
- ¼ tsp salt
Instructions
- Preheat oven to 350°F. Line an 8×8 baking pan with foil and lightly grease.
- In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Stir until fully combined. Press mixture into the bottom of the prepared pan.
- Bake crust for 8-10 minutes until lightly golden. Set aside to cool slightly.
- In a large bowl, beat cream cheese until smooth. Add sugar and vanilla and beat until combined.
- Add eggs one at a time, mixing well after each addition.
- Remove 1 cup of the batter and set aside.
- To the remaining batter, add pumpkin, cinnamon, nutmeg, cloves, ginger, and salt. Mix until fully combined.
- Pour pumpkin batter over crust and smooth the top.
- Spoon reserved plain batter over the top and swirl gently with a knife for a marbled effect.
- Bake for 35-40 minutes until the center is just set.
- Cool to room temperature, then refrigerate at least 4 hours before slicing and serving.
