Description

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 (8 oz) tub whipped topping (like Cool Whip), thawed
  • 2 (3.4 oz) packages instant vanilla pudding mix
  • 1 (15 oz) can pumpkin puree
  • 2 teaspoons pumpkin pie spice
  • 2 cups cold milk
  • Additional whipped topping for topping (optional)
  • Chopped pecans or cinnamon for garnish (optional)

Instructions

  1. In a medium bowl, mix graham cracker crumbs, granulated sugar, and melted butter until combined. Press the mixture evenly into the bottom of a 9×13-inch dish. Chill in the fridge while preparing the next layer.
  2. In another bowl, beat cream cheese and powdered sugar until smooth. Fold in whipped topping. Spread evenly over the chilled crust.
  3. In a large bowl, whisk together vanilla pudding mix, pumpkin puree, pumpkin pie spice, and cold milk until smooth and thickened.
  4. Spread the pumpkin pudding mixture over the cream cheese layer evenly.
  5. Top with additional whipped topping, spreading evenly across the top.
  6. Refrigerate for at least 4 hours, or until set.
  7. Before serving, garnish with chopped pecans or a sprinkle of cinnamon if desired.
