Ingredients
- 1/4 cup all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon pumpkin pie spice
- 1 tablespoon brown sugar
- Pinch of salt
- 1/4 cup milk
- 2 tablespoons canned pumpkin purée
- 1/2 tablespoon vegetable oil
- 1/4 teaspoon vanilla extract
Instructions
- In a microwave-safe mug, whisk together flour, baking powder, pumpkin pie spice, brown sugar, and salt.
- Add in milk, pumpkin purée, vegetable oil, and vanilla extract. Stir until well combined and smooth.
- Microwave the mug on high for 60–90 seconds, or until the cake has risen and is set in the center. Do not overcook.
- Allow to cool slightly before enjoying. Optionally top with whipped cream or a sprinkle of cinnamon.
