Description

Ingredients

  • 1 cup pumpkin puree
  • 1 1/2 cups old-fashioned rolled oats
  • 1 1/2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 tsp salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the egg, vanilla extract, and pumpkin puree, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the rolled oats and chocolate chips until evenly distributed.
  7. Drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 12–14 minutes or until the edges are lightly golden and the centers are set.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Don’t overmix the dough to avoid cakey cookies.
  • Use pure pumpkin puree, not pumpkin pie filling.
  • Chill the dough to prevent spreading, if desired.
  • Store in an airtight container for up to 4 days or freeze for up to 3 months.
