Ingredients
- 1 cup pumpkin puree
- 1 1/2 cups old-fashioned rolled oats
- 1 1/2 cups all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/2 tsp salt
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg, vanilla extract, and pumpkin puree, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the rolled oats and chocolate chips until evenly distributed.
- Drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 12–14 minutes or until the edges are lightly golden and the centers are set.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- Don’t overmix the dough to avoid cakey cookies.
- Use pure pumpkin puree, not pumpkin pie filling.
- Chill the dough to prevent spreading, if desired.
- Store in an airtight container for up to 4 days or freeze for up to 3 months.
- Customize with nuts, dried fruit, or different chocolate chips.
