Description

Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 3/4 cups buttermilk
  • 1 cup canned pumpkin (not pumpkin pie filling)
  • 2 large eggs
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter or oil for greasing the griddle
  • 2 cups strawberries, fresh or frozen
  • 1/2 cup sugar (for syrup)
  • 1 teaspoon vanilla extract (for syrup)

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and pumpkin pie spice.
  2. In another bowl, mix the buttermilk, canned pumpkin, eggs, vegetable oil, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; lumps are okay.
  4. Preheat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  5. Pour 1/4 cup of batter for each pancake onto the griddle. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  6. To make the strawberry syrup, combine the strawberries and sugar in a saucepan over medium heat. Cook until the berries break down and the mixture thickens slightly, about 10-12 minutes. Stir in vanilla extract.
  7. Serve pancakes warm with the homemade strawberry syrup on top.
