Description

These Pumpkin Whoopie Pies are soft, spiced cake-like cookies sandwiched with a creamy maple filling, making them a perfect fall treat.


Ingredients

  • 3 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tbsp ground cinnamon
  • 1 tbsp ground ginger
  • 1 tbsp ground cloves
  • 2 cups packed brown sugar
  • 1 cup vegetable oil
  • 3 cups chilled pumpkin puree
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3 cups powdered sugar
  • 1/2 cup (1 stick) unsalted butter, softened
  • 8 oz cream cheese, softened
  • 1 tsp maple extract (or vanilla extract)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, salt, baking powder, baking soda, cinnamon, ginger, and cloves.
  3. In a large bowl, beat together brown sugar and oil. Add pumpkin puree and mix well.
  4. Add eggs and vanilla extract to the wet mixture and beat until combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until fully incorporated.
  6. Using a cookie scoop, drop rounded tablespoons of batter onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the cookies are set and spring back when touched. Let cool completely on wire racks.
  8. To make the filling, beat together the powdered sugar, butter, cream cheese, and maple extract until smooth and creamy.
  9. Once cookies are cool, spread or pipe filling on the flat side of one cookie and top with another to make a sandwich.
  10. Refrigerate if not serving immediately to allow filling to set.

Notes

  • Store in an airtight container in the refrigerator for up to 5 days.
  • You can freeze the whoopie pies for up to 2 months.
  • For a firmer filling, refrigerate it for 30 minutes before assembling.
  • Make sure pumpkin puree is well-drained if homemade.
