Description
These Pumpkin Whoopie Pies are soft, spiced cake-like cookies sandwiched with a creamy maple filling, making them a perfect fall treat.
Ingredients
- 3 cups all-purpose flour
- 1 tsp salt
- 1 tsp baking powder
- 1 tsp baking soda
- 2 tbsp ground cinnamon
- 1 tbsp ground ginger
- 1 tbsp ground cloves
- 2 cups packed brown sugar
- 1 cup vegetable oil
- 3 cups chilled pumpkin puree
- 2 large eggs
- 1 tsp vanilla extract
- 3 cups powdered sugar
- 1/2 cup (1 stick) unsalted butter, softened
- 8 oz cream cheese, softened
- 1 tsp maple extract (or vanilla extract)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, salt, baking powder, baking soda, cinnamon, ginger, and cloves.
- In a large bowl, beat together brown sugar and oil. Add pumpkin puree and mix well.
- Add eggs and vanilla extract to the wet mixture and beat until combined.
- Gradually add the dry ingredients to the wet ingredients and mix until fully incorporated.
- Using a cookie scoop, drop rounded tablespoons of batter onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the cookies are set and spring back when touched. Let cool completely on wire racks.
- To make the filling, beat together the powdered sugar, butter, cream cheese, and maple extract until smooth and creamy.
- Once cookies are cool, spread or pipe filling on the flat side of one cookie and top with another to make a sandwich.
- Refrigerate if not serving immediately to allow filling to set.
Notes
- Store in an airtight container in the refrigerator for up to 5 days.
- You can freeze the whoopie pies for up to 2 months.
- For a firmer filling, refrigerate it for 30 minutes before assembling.
- Make sure pumpkin puree is well-drained if homemade.
