Description

Queijadas are traditional Portuguese custard cupcakes with a lightly caramelized top and a creamy, sweet interior. These handheld desserts are simple to make and deliver rich flavor with minimal effort.

Ingredients

  • 3 large eggs
  • 2 cups milk
  • 1 1/2 cups granulated sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup melted unsalted butter
  • 1/2 tsp vanilla extract
  • 1/8 tsp salt

Instructions

  1. Preheat oven to 350°F. Line muffin pans with 18 cupcake liners.
  2. In a large bowl, beat the eggs until frothy.
  3. Add milk, sugar, flour, melted butter, vanilla extract, and salt. Mix until well combined and smooth.
  4. Pour the batter into the prepared cupcake liners, filling each about 3/4 full.
  5. Bake for 35–40 minutes, or until the tops are golden and lightly browned.
  6. Remove from oven and allow to cool in the pan for 5–10 minutes before transferring to a wire rack to cool completely.

Notes

  • The custard will puff up during baking and settle as it cools.
  • Store queijadas in an airtight container at room temperature for up to 2 days or refrigerate for longer shelf life.
  • These cupcakes are best enjoyed at room temperature or slightly chilled.
