Description

Quick and Easy Parmesan Zucchini Fries are a healthier alternative to traditional fries. Coated in a seasoned Parmesan breadcrumb mix and baked until crispy, these zucchini sticks make a perfect appetizer or side dish.


Ingredients

  • 2 zucchinis, quartered lengthwise
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup dry bread crumbs
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • Salt and ground black pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Place zucchini quarters in a large bowl and drizzle with olive oil. Toss to coat evenly.
  3. In a separate bowl, combine Parmesan cheese, bread crumbs, oregano, thyme, garlic powder, salt, and pepper.
  4. Press each zucchini stick into the Parmesan mixture, coating all sides.
  5. Place coated zucchini fries on the prepared baking sheet in a single layer.
  6. Bake in the preheated oven until golden and crispy, about 20 to 25 minutes.
  7. Serve hot, optionally with your favorite dipping sauce.

Notes

  • For extra crispiness, broil for the last 2 minutes.
