Ingredients

  • 4 boneless skinless chicken breasts
  • 1/2 cup all purpose flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 8 oz mushrooms, sliced
  • 3/4 cup Marsala wine
  • 3/4 cup chicken broth
  • 1/2 cup heavy cream
  • Fresh parsley for garnish (optional)

Instructions

  1. Place chicken breasts between two sheets of plastic wrap and pound to an even thickness using a meat mallet.
  2. In a shallow dish, mix flour, salt, and pepper. Dredge each chicken breast in the flour mixture and shake off excess.
  3. Heat olive oil and butter in a large skillet over medium-high heat. Sear the chicken for about 3-4 minutes on each side, or until golden brown and cooked through. Remove from pan and set aside.
  4. In the same pan, add mushrooms and sauté until soft and browned, about 5 minutes.
  5. Pour in the Marsala wine and simmer for 1-2 minutes, scraping up any browned bits from the pan.
  6. Add the chicken broth and heavy cream. Stir and bring to a gentle simmer.
  7. Return the chicken to the pan and simmer for another 3-5 minutes, or until the sauce thickens slightly.
  8. Garnish with fresh parsley if desired and serve warm.
