Description
A fun and festive Halloween twist on traditional Irish colcannon, made with creamy mashed potatoes, sautéed cabbage, and green onions. Quick to prepare and perfect as a spooky seasonal side dish.
Ingredients
- 2 pounds russet potatoes, peeled and cubed
- 4 tablespoons unsalted butter
- 3/4 cup whole milk, warmed
- 3 cups green cabbage, finely shredded
- 4 green onions, sliced
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Place the cubed potatoes in a large pot and cover with cold water. Bring to a boil and cook for 15-20 minutes until fork tender.
- While the potatoes cook, melt 2 tablespoons of butter in a skillet over medium heat. Add the cabbage and sauté for 5-7 minutes until softened.
- Add the garlic and green onions to the skillet and cook for another 1-2 minutes until fragrant. Remove from heat.
- Drain the cooked potatoes and return them to the pot. Mash until smooth.
- Add the remaining butter, warmed milk, salt, and pepper to the mashed potatoes. Stir until creamy.
- Fold the sautéed cabbage mixture into the mashed potatoes and mix until evenly combined.
- Spoon into a serving dish and garnish with parsley if desired. For Halloween presentation, shape or decorate as desired before serving.
Notes
- For extra creaminess, substitute half-and-half for the milk.
- Kale can be used instead of cabbage for a more traditional version.
- Add crispy fried onions on top for additional texture.
