Ingredients

  • 500 g boneless skinless chicken breast, thinly sliced

  • 1 tablespoon cornstarch

  • 2 tablespoons vegetable oil, divided

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 cup broccoli florets

  • 1 cup snow peas

  • 1 carrot, julienned

  • 3 cloves garlic, minced

  • 1 teaspoon grated fresh ginger

  • 1/4 cup low sodium soy sauce

  • 2 tablespoons oyster sauce

  • 1 tablespoon honey

  • 1/4 cup chicken broth

  • 1 teaspoon sesame oil

  • 2 green onions, sliced

  • Sesame seeds for garnish

Instructions

  1. Toss the sliced chicken with cornstarch until evenly coated.

  2. Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the chicken and stir fry for 4–5 minutes until cooked through. Remove from the pan and set aside.

  3. Add the remaining tablespoon of oil to the pan. Stir fry the garlic and ginger for 30 seconds until fragrant.

  4. Add the broccoli, carrots, and bell peppers. Stir fry for 3–4 minutes. Add the snow peas and cook for another 1–2 minutes until vegetables are tender-crisp.

  5. In a small bowl, mix soy sauce, oyster sauce, honey, chicken broth, and sesame oil.

  6. Return the chicken to the pan and pour the sauce over the mixture. Stir well and cook for 1–2 minutes until the sauce thickens slightly and coats everything evenly.

  7. Remove from heat and garnish with green onions and sesame seeds before serving.
