Ranger Cookie Bars are chewy, buttery dessert bars loaded with oats, coconut, and chocolate chips. They’re easy to make and perfect for sharing, offering a delicious twist on classic oatmeal cookies.
Ingredients
- 1 cup butter, softened
- 1 cup packed brown sugar
- 1 cup white sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 2 cups rolled oats
- 1 cup sweetened flaked coconut
- 1 cup crispy rice cereal (such as Rice Krispies®)
- 1 cup semisweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan or line with parchment paper.
- In a large bowl, cream together the butter, brown sugar, and white sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the creamed mixture and mix until well combined.
- Stir in the oats, coconut, crispy rice cereal, and chocolate chips until evenly incorporated.
- Spread the batter evenly into the prepared baking pan.
- Bake in the preheated oven for 20 to 25 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
- Allow to cool in the pan before cutting into bars.
Notes
- Use parchment paper for easier removal and cleaner cuts.
- You can substitute butterscotch chips or white chocolate chips for a different flavor.
- Store in an airtight container for up to a week.
