Description

Ranger Cookie Bars are chewy, buttery dessert bars loaded with oats, coconut, and chocolate chips. They’re easy to make and perfect for sharing, offering a delicious twist on classic oatmeal cookies.


Ingredients

  • 1 cup butter, softened
  • 1 cup packed brown sugar
  • 1 cup white sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 2 cups rolled oats
  • 1 cup sweetened flaked coconut
  • 1 cup crispy rice cereal (such as Rice Krispies®)
  • 1 cup semisweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan or line with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and white sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the creamed mixture and mix until well combined.
  6. Stir in the oats, coconut, crispy rice cereal, and chocolate chips until evenly incorporated.
  7. Spread the batter evenly into the prepared baking pan.
  8. Bake in the preheated oven for 20 to 25 minutes, or until the edges are golden and a toothpick inserted into the center comes out clean.
  9. Allow to cool in the pan before cutting into bars.

Notes
