Ingredients
- 1/2 cup fresh or frozen raspberries
- 3/4 cup almond milk or coconut milk
- 1 tbsp maple syrup
- 1/2 tsp vanilla extract
- 1/4 cup chia seeds
Instructions
- Blend the raspberries, almond milk or coconut milk, maple syrup, and vanilla extract in a blender until smooth.
- Pour the mixture into a bowl, add the chia seeds, and whisk until well combined.
- Refrigerate for at least 1 hour, or overnight, until thickened and set.
- Stir well before serving and top with your favorite toppings.
Notes
- For a thicker pudding, add an extra tablespoon of chia seeds.
- You can substitute honey for maple syrup if not strictly vegan.
- Store in an airtight container in the refrigerator for up to 3 days.
- Top with fresh berries, granola, or shredded coconut before serving.
