Description

These Raspberry Crumble Bars feature a buttery crust and crumb topping with a sweet-tart raspberry filling. They’re perfect for dessert, snacks, or even breakfast!


Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup rolled oats
  • ¾ cup granulated sugar
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup cold unsalted butter, cubed
  • 1 egg
  • 2 cups fresh raspberries (or frozen)
  • ¼ cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon juice (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, combine flour, oats, sugar, baking powder, and salt.
  3. Add the cold, cubed butter. Use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.
  4. Add the egg and mix until it forms a dough. It may seem a bit crumbly.
  5. Press about 2/3 of the dough into the bottom of the prepared pan to form the crust. Set aside the rest of the dough for the topping.
  6. In a small saucepan, combine raspberries, sugar, cornstarch, and lemon juice. Cook over medium heat for 5-7 minutes, stirring often, until the raspberries break down and the mixture thickens.
  7. Remove from heat and let the raspberry mixture cool slightly.
  8. Spread the raspberry mixture evenly over the crust in the pan.
  9. Sprinkle the remaining crumble dough on top of the raspberry filling.
  10. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the filling is bubbling.
  11. Let the bars cool completely in the pan before cutting into squares.

Notes

  • You can use frozen raspberries, but thaw and drain excess liquid first.
  • Lemon juice enhances the tartness of raspberries but is optional.
  • Store in an airtight container at room temperature for up to 2 days, or refrigerate for longer freshness.
  • Can be served warm with a scoop of vanilla ice cream.
