Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 1 pound ground beef
  • 1 small eggplant, diced
  • 1 medium zucchini, diced
  • 1 red bell pepper, diced
  • 1 (14.5-ounce) can diced tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt, more to taste
  • 1/4 teaspoon black pepper, more to taste
  • 1/4 cup chopped fresh parsley (optional, for garnish)
  • Grated Parmesan cheese (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until soft and translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for 30 seconds, until fragrant.
  3. Add the ground beef to the skillet and cook, breaking it up with a spoon, until browned and cooked through, about 6 to 8 minutes. Drain excess fat if needed.
  4. Stir in the diced eggplant, zucchini, and red bell pepper. Cook for 5 to 7 minutes, stirring occasionally, until the vegetables begin to soften.
  5. Add the diced tomatoes (with juices), tomato paste, oregano, basil, salt, and pepper. Stir to combine.
  6. Reduce the heat to low, cover, and simmer for 15 to 20 minutes, stirring occasionally, until the vegetables are tender and the flavors are well combined.
  7. Taste and adjust seasoning with additional salt and pepper if needed.
  8. Garnish with chopped parsley and grated Parmesan cheese, if desired. Serve hot.
