Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 medium eggplant, diced
  • 2 zucchini, diced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 tablespoon tomato paste
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and sauté until translucent, about 5 minutes.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Add diced eggplant and cook for 5-7 minutes until slightly softened.
  5. Stir in zucchini, red bell pepper, and yellow bell pepper. Cook for another 5 minutes.
  6. Add diced tomatoes, tomato paste, and vegetable broth. Stir to combine.
  7. Season with dried thyme, oregano, salt, and pepper.
  8. Bring the soup to a boil, then reduce heat and simmer for 25-30 minutes until vegetables are tender.
  9. Taste and adjust seasoning if needed.
  10. Serve hot, garnished with fresh basil.

  • For a thicker soup, use an immersion blender to blend a portion of the soup.
