Ingredients
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 1 medium eggplant, diced
- 2 zucchini, diced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 1 tablespoon tomato paste
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil, for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and sauté until translucent, about 5 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Add diced eggplant and cook for 5-7 minutes until slightly softened.
- Stir in zucchini, red bell pepper, and yellow bell pepper. Cook for another 5 minutes.
- Add diced tomatoes, tomato paste, and vegetable broth. Stir to combine.
- Season with dried thyme, oregano, salt, and pepper.
- Bring the soup to a boil, then reduce heat and simmer for 25-30 minutes until vegetables are tender.
- Taste and adjust seasoning if needed.
- Serve hot, garnished with fresh basil.
Notes
- For a thicker soup, use an immersion blender to blend a portion of the soup.
- Leftovers can be stored in the fridge for up to 4 days.
