Description
These no-bake raw brownies are rich, fudgy, and naturally sweetened with dates. A quick and healthy vegan, gluten-free treat perfect for snacking or dessert.
Ingredients
- 1½ cups walnuts
- 7–8 small dates
- ¼ cup cacao powder
- ¼ cup unsweetened shredded coconut
- 1½ tbsp coconut oil
- Pinch of salt
- ¼ tsp vanilla powder or essence
Instructions
- If you have a food processor, place all ingredients into it and blend until a sticky dough forms.
- If not, add the walnuts to a blender and process until they form a flour. Blend the dates until broken into small pieces. Combine walnut flour, date pieces, and remaining ingredients in a bowl and mix by hand until a dough forms.
- Scoop the mixture into a square or rectangular container (about 10-15 cm wide), press flat evenly, and score into small squares or rectangles with a knife.
- Place in the freezer for 1-2 hours to set. Remove and separate into pieces.
- Store leftovers in the freezer.
Notes
- You can substitute almonds or cashews for walnuts if desired.
- Add a drizzle of melted dark chocolate on top for extra richness.
- If the mixture feels too dry, add a few more dates or a small amount of coconut oil.
- Keep brownies frozen or refrigerated for best texture.
