Description

These no-bake raw brownies are rich, fudgy, and naturally sweetened with dates. A quick and healthy vegan, gluten-free treat perfect for snacking or dessert.


Ingredients

  • 1½ cups walnuts
  • 78 small dates
  • ¼ cup cacao powder
  • ¼ cup unsweetened shredded coconut
  • 1½ tbsp coconut oil
  • Pinch of salt
  • ¼ tsp vanilla powder or essence

Instructions

  1. If you have a food processor, place all ingredients into it and blend until a sticky dough forms.
  2. If not, add the walnuts to a blender and process until they form a flour. Blend the dates until broken into small pieces. Combine walnut flour, date pieces, and remaining ingredients in a bowl and mix by hand until a dough forms.
  3. Scoop the mixture into a square or rectangular container (about 10-15 cm wide), press flat evenly, and score into small squares or rectangles with a knife.
  4. Place in the freezer for 1-2 hours to set. Remove and separate into pieces.
  5. Store leftovers in the freezer.

Notes

  • You can substitute almonds or cashews for walnuts if desired.
  • Add a drizzle of melted dark chocolate on top for extra richness.
  • If the mixture feels too dry, add a few more dates or a small amount of coconut oil.
  • Keep brownies frozen or refrigerated for best texture.
