Ingredients
- 1 lb shrimp, peeled and deveined
- 1 ½ tablespoons olive oil, divided
- 3 garlic cloves, minced
- 1 cup white wine
- Juice of one lime
- ½ teaspoon Italian seasoning
- 1 teaspoon red pepper flakes
- ½ stick butter
- 1 tablespoon chopped parsley
- Salt and pepper to taste
- ⅓ cup grated Parmesan cheese
Instructions
- Heat ½ tablespoon olive oil in a large cast-iron skillet over medium heat. Cook the shrimp for about 2 minutes per side, until just pink and cooked through. Transfer the shrimp to a plate.
- In the same skillet, add the remaining olive oil and sauté the garlic for 1 minute until fragrant.
- Add the Italian seasoning, red pepper flakes, white wine, and lime juice. Simmer until the liquid is reduced by about three-quarters.
- Reduce the heat to low and add the butter, swirling the pan until fully melted. Stir in the parsley and season with salt and pepper to taste.
- Return the shrimp to the skillet and cook gently until heated through. Serve topped with grated Parmesan cheese.
