Description

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 ½ tablespoons olive oil, divided
  • 3 garlic cloves, minced
  • 1 cup white wine
  • Juice of one lime
  • ½ teaspoon Italian seasoning
  • 1 teaspoon red pepper flakes
  • ½ stick butter
  • 1 tablespoon chopped parsley
  • Salt and pepper to taste
  • ⅓ cup grated Parmesan cheese

Instructions

  1. Heat ½ tablespoon olive oil in a large cast-iron skillet over medium heat. Cook the shrimp for about 2 minutes per side, until just pink and cooked through. Transfer the shrimp to a plate.
  2. In the same skillet, add the remaining olive oil and sauté the garlic for 1 minute until fragrant.
  3. Add the Italian seasoning, red pepper flakes, white wine, and lime juice. Simmer until the liquid is reduced by about three-quarters.
  4. Reduce the heat to low and add the butter, swirling the pan until fully melted. Stir in the parsley and season with salt and pepper to taste.
  5. Return the shrimp to the skillet and cook gently until heated through. Serve topped with grated Parmesan cheese.
