Ingredients

  • ¾ stick (85 g) unsalted butter, melted
  • 1 cup (200 g) granulated sugar
  • ¼ cup (55 g) light brown sugar
  • 3 large eggs
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • ⅓ cup (80 ml) vegetable oil
  • ¼ cup (25 g) cocoa powder
  • ¾ cup (90 g) all-purpose flour
  • 1 tablespoon vinegar
  • 1 tablespoon cornstarch
  • ¼ teaspoon salt
  • ½ teaspoon red food coloring
  • ¾ cup (130 g) white chocolate chips (optional)
  • 4 oz (115 g) cream cheese, softened
  • ¾ stick (85 g) unsalted butter, softened (for frosting)
  • 4 cups (480 g) powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat oven to 350°F (180°C). Line an 8-inch square baking pan with parchment paper, leaving overhang for easy removal.
  2. Melt the butter and whisk together with granulated sugar and brown sugar until smooth.
  3. Add eggs, egg yolk, and vanilla extract. Whisk gently until fully combined.
  4. Mix in vegetable oil and cocoa powder until smooth.
  5. Stir red food coloring into a small portion of batter, then mix back into the bowl for even color.
  6. Fold in flour, cornstarch, and salt until just combined.
  7. Stir in vinegar and white chocolate chips if using.
  8. Pour batter into prepared pan and smooth the top. Bake for 20–25 minutes, until a toothpick inserted in the center comes out with a few moist crumbs.
  9. Allow brownies to cool completely in the pan.
  10. For the frosting, beat cream cheese and butter until smooth and creamy.
  11. Gradually add powdered sugar and beat until fluffy. Mix in vanilla extract.
  12. Spread frosting evenly over cooled brownies, slice into 16 squares, and serve.
