Ingredients

3 large eggs

1 cup granulated sugar

1/2 cup all-purpose flour

1/3 cup unsweetened cocoa powder

1 tsp baking powder

1/4 tsp salt

1/2 cup peanut butter (smooth or crunchy)

1 cup powdered sugar

1/2 cup butter, softened

1/2 tsp vanilla extract

1/2 cup heavy cream

1/4 cup chocolate chips


Instructions

  • Preheat the oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper or grease and flour it.

  • In a large mixing bowl, whisk eggs and granulated sugar until pale and fluffy.

  • Sift together flour, cocoa powder, baking powder, and salt in a separate bowl.

  • Gradually fold the dry ingredients into the egg mixture until just combined.

  • Pour the batter into the prepared pan, spreading it out evenly. Bake for 12-15 minutes or until a toothpick inserted comes out clean.

  • While the cake bakes, lay a clean kitchen towel on a flat surface and dust it with powdered sugar.

  • Once the cake is done, remove it from the oven and cool for 5 minutes in the pan. Then, invert it onto the towel and peel off the parchment paper.

  • Gently roll the cake up with the towel and let it cool completely.

  • For the peanut butter filling, mix peanut butter, powdered sugar, butter, and vanilla extract until smooth and creamy.

  • Unroll the cooled cake and spread the peanut butter filling evenly over it.

  • Roll the cake back up (without the towel) and place it seam-side down on a platter.

  • For the ganache, heat heavy cream in a saucepan until simmering. Remove from heat, pour over chocolate chips, and stir until smooth.

  • Pour the ganache over the cake roll and allow it to set before slicing and serving.

  1. Nutty Option: Add crushed peanuts or other nuts to the peanut butter filling for extra crunch.
