Ingredients

  • 1 cup pitted Medjool dates
  • 1 cup almonds
  • 1/2 cup shredded coconut
  • 1 tablespoon coconut oil

  • 1/4 cup chia seeds
  • 1 1/4 cups canned coconut milk (full-fat)
  • 2 tablespoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon lime juice
  • 1/2 teaspoon lime zest

Instructions

  1. In a food processor, blend dates, almonds, shredded coconut, coconut oil, and sea salt until the mixture is sticky and holds together when pressed.
  2. Press the crust mixture into a parchment-lined 8×8 inch baking pan to form an even layer. Place in the freezer to firm up.
  3. In a mixing bowl, whisk together chia seeds, coconut milk, maple syrup, vanilla extract, lime juice, and lime zest.
  4. Let the chia mixture sit for 10-15 minutes, stirring occasionally to prevent clumping, until it thickens.
  5. Pour the thickened chia pudding over the crust and spread evenly.
