Instructions
- Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with liners or grease well.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together the egg, buttermilk, oil, and vanilla extract.
- Combine the wet and dry ingredients, mixing until just blended. Do not overmix.
- Gently fold in the chopped rhubarb.
- Fill the muffin cups about ¾ full with batter.
- In a small bowl, mix together the sugar and cinnamon. Sprinkle the mixture generously over the muffin tops.
- Bake for 20–25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- For extra flavor, you can add a teaspoon of ground ginger or nutmeg to the batter.
