Ingredients

  • 1 cup long grain white rice
  • 2 cups water
  • 1/4 teaspoon salt
  • 4 cups whole milk, divided
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • Ground nutmeg for garnish (optional)

Instructions

  1. In a medium saucepan, combine rice, water, and salt. Bring to a boil over medium-high heat.
  2. Reduce heat to low, cover, and simmer for 15-20 minutes or until water is absorbed and rice is tender.
  3. Add 3 cups of milk and sugar to the cooked rice. Increase heat to medium and cook, stirring frequently, until thick and creamy, about 15-20 minutes.
  4. In a small bowl, whisk together remaining 1 cup milk and eggs. Slowly add to the rice mixture, stirring constantly.
  5. Cook for another 2 minutes, then remove from heat and stir in butter and vanilla extract. Add cinnamon if using.
  6. Let pudding cool slightly before serving. Can be served warm or chilled. Sprinkle with nutmeg if desired.

Notes

  • For extra creaminess, use whole milk.
  • Adjust sweetness by increasing or decreasing sugar.
  • Raisins can be added during the last 5 minutes of cooking for a classic variation.
