Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 cup whole milk ricotta cheese
- 1 teaspoon vanilla extract
- 1 cup powdered sugar (for glaze)
- 2–3 tablespoons milk (for glaze)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the butter and sugar together until light and fluffy.
- Add the egg, ricotta cheese, and vanilla extract, and mix until well combined.
- Gradually fold in the dry ingredients until a soft dough forms.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12–15 minutes, or until the bottoms are lightly golden.
- Allow cookies to cool completely on a wire rack.
- In a small bowl, whisk together powdered sugar and milk to form a smooth glaze.
- Drizzle or spread glaze over cooled cookies and let set before serving.

- Do not overbake to maintain a soft texture.
- Full-fat ricotta provides the best flavor and texture.
- Add lemon zest or almond extract for variation.
