Description

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 cup whole milk ricotta cheese
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons milk (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, beat the butter and sugar together until light and fluffy.
  4. Add the egg, ricotta cheese, and vanilla extract, and mix until well combined.
  5. Gradually fold in the dry ingredients until a soft dough forms.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 12–15 minutes, or until the bottoms are lightly golden.
  8. Allow cookies to cool completely on a wire rack.
  9. In a small bowl, whisk together powdered sugar and milk to form a smooth glaze.
  10. Drizzle or spread glaze over cooled cookies and let set before serving.
