Description
Ritz Cracker Chicken Casserole is a creamy, comforting dish made with shredded chicken, sour cream, cream of chicken soup, and buttery Ritz crackers. It’s an easy weeknight dinner the whole family will love.
Ingredients
- 3 cups cooked and shredded chicken
 - 1 cup sour cream
 - 1 (10.5 oz) can cream of chicken soup
 - 2 sleeves Ritz crackers (about 60 crackers), crushed
 - 1/2 cup unsalted butter, melted
 - 1/2 teaspoon garlic powder
 - Salt and pepper to taste
 - Cooking spray
 
Instructions
- Preheat oven to 350°F (175°C) and spray a 9×13 inch casserole dish with cooking spray.
 - In a large bowl, mix together shredded chicken, sour cream, cream of chicken soup, garlic powder, salt, and pepper.
 - Spread the chicken mixture evenly into the prepared casserole dish.
 - In a separate bowl, mix crushed Ritz crackers with melted butter until evenly coated.
 - Sprinkle the buttery cracker topping evenly over the chicken mixture.
 - Bake uncovered for 25–30 minutes, or until hot and bubbly and the top is golden brown.
 - Remove from oven and let it sit for 5 minutes before serving.
 
Notes
- Use rotisserie chicken for a quicker prep time.
 - You can add frozen peas or mixed vegetables to the chicken mixture for added nutrition.
 - Substitute Greek yogurt for sour cream for a lighter version.
 - Store leftovers in the refrigerator for up to 3 days.
