Description

These Ritz S’mores Cookies are the perfect no-bake treat, combining salty, sweet, and gooey flavors in one bite. Made with buttery Ritz crackers, melty chocolate, and fluffy marshmallow creme, they’re quick to make and absolutely irresistible.


Ingredients

  • 48 Ritz crackers (24 sandwich cookies)
  • 1 cup marshmallow creme (Fluff)
  • 1 ½ cups semi-sweet chocolate chips
  • 1 tbsp shortening or coconut oil

Instructions

  1. Line a baking sheet with parchment or wax paper and set aside.
  2. Spread about 1 to 1½ teaspoons of marshmallow creme on the flat side of a Ritz cracker. Top with another cracker to make a sandwich. Repeat with all crackers.
  3. Place the sandwich cookies on the prepared baking sheet and freeze for about 15 minutes. This helps with easier dipping.
  4. In a microwave-safe bowl, melt the chocolate chips and shortening or coconut oil in 30-second increments, stirring in between, until smooth and fully melted.
  5. Dip each frozen sandwich cookie into the melted chocolate, turning to coat completely. Let excess drip off and place back onto the baking sheet.
  6. Let the cookies set at room temperature or refrigerate until the chocolate is firm.
