Description
These Ritz S’mores Cookies are the perfect no-bake treat, combining salty, sweet, and gooey flavors in one bite. Made with buttery Ritz crackers, melty chocolate, and fluffy marshmallow creme, they’re quick to make and absolutely irresistible.
Ingredients
- 48 Ritz crackers (24 sandwich cookies)
- 1 cup marshmallow creme (Fluff)
- 1 ½ cups semi-sweet chocolate chips
- 1 tbsp shortening or coconut oil
Instructions
- Line a baking sheet with parchment or wax paper and set aside.
- Spread about 1 to 1½ teaspoons of marshmallow creme on the flat side of a Ritz cracker. Top with another cracker to make a sandwich. Repeat with all crackers.
- Place the sandwich cookies on the prepared baking sheet and freeze for about 15 minutes. This helps with easier dipping.
- In a microwave-safe bowl, melt the chocolate chips and shortening or coconut oil in 30-second increments, stirring in between, until smooth and fully melted.
- Dip each frozen sandwich cookie into the melted chocolate, turning to coat completely. Let excess drip off and place back onto the baking sheet.
- Let the cookies set at room temperature or refrigerate until the chocolate is firm.

- Use marshmallow creme, not regular marshmallows, for easier spreading.
- Freezing the sandwiches before dipping helps maintain shape.
