Description

Roasted Brussels sprouts tossed with sweet pomegranate arils and nutty sesame seeds for a simple, flavorful side dish.


Ingredients

  • 300 g Brussels sprouts
  • 50 g pomegranate arils
  • 1 dessertspoon toasted sesame seeds
  • 1 tbsp olive oil

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Cut the Brussels sprouts in half through the core.
  3. Heat the olive oil in a large roasting tin, then place the sprouts cut side down in the hot oil.
  4. Roast for 10–15 minutes, then turn the sprouts over.
  5. Return to the oven and roast for about 20 minutes more until softened and golden.
  6. Add the pomegranate arils and sesame seeds, mix well, and return to the oven for 5 minutes until heated through.

Notes

  • For extra crispiness, avoid overcrowding the pan.
  • Swap sesame seeds with chopped nuts for variation.
  • Serve warm as a side dish or add to grain bowls.
  • Store leftovers in the refrigerator for up to 2 days.
