Ingredients
- 2 cups cherry tomatoes
- 2 tablespoons olive oil
- 2 garlic cloves, chopped
- Salt and pepper, to taste
- 1 French baguette, sliced
- 1 garlic clove, for rubbing on toast
- Fresh basil, chopped
- Balsamic glaze, for drizzling
Instructions
- Preheat oven to 400°F (200°C).
- Place cherry tomatoes, olive oil, chopped garlic, salt, and pepper on a baking sheet. Toss to combine.
- Roast tomatoes for 20-25 minutes, until they begin to burst and caramelize.
- Meanwhile, slice the baguette and toast the slices in the oven or on a grill pan until golden and crispy.
- Rub the toasted bread with a garlic clove while still warm.
- Spoon the roasted tomatoes onto each slice of bread.
- Top with chopped fresh basil and drizzle with balsamic glaze before serving.
