Description

This Roasted Cherry Tomato Bruschetta is a simple and flavorful appetizer featuring sweet cherry tomatoes roasted with garlic and olive oil, then served over crispy toasted bread and finished with fresh basil and balsamic glaze.


Ingredients

  • 2 cups cherry tomatoes
  • 2 tablespoons olive oil
  • 2 garlic cloves, chopped
  • Salt and pepper, to taste
  • 1 French baguette, sliced
  • 1 garlic clove, for rubbing on toast
  • Fresh basil, chopped
  • Balsamic glaze, for drizzling

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Place cherry tomatoes, olive oil, chopped garlic, salt, and pepper on a baking sheet. Toss to combine.
  3. Roast tomatoes for 20-25 minutes, until they begin to burst and caramelize.
  4. Meanwhile, slice the baguette and toast the slices in the oven or on a grill pan until golden and crispy.
  5. Rub the toasted bread with a garlic clove while still warm.
  6. Spoon the roasted tomatoes onto each slice of bread.
  7. Top with chopped fresh basil and drizzle with balsamic glaze before serving.
