Description
This Roasted Garlic Aioli is a creamy, flavorful condiment made by blending roasted garlic with mayonnaise, lemon juice, and Dijon mustard. Perfect as a dip, spread, or sauce for vegetables, sandwiches, and meats.
Ingredients
- 1 head of garlic
- 1 tsp olive oil
- 1/2 cup mayonnaise
- 1 tsp Dijon mustard
- 1 tbsp lemon juice
- Salt to taste
- Pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Slice the top off the garlic head to expose the cloves. Drizzle with olive oil and wrap in foil.
- Roast for 30–35 minutes until the cloves are soft and golden brown. Let cool.
- Squeeze the roasted garlic cloves out of the skin into a bowl.
- Add mayonnaise, Dijon mustard, lemon juice, salt, and pepper to the bowl.
- Mix or blend until smooth and creamy.
- Refrigerate for at least 30 minutes before serving to allow flavors to meld.

- Use a food processor for an ultra-smooth texture.
- Can be stored in the refrigerator for up to one week.
