Description

This Roasted Tomato and Garlic Burrata is a simple yet flavorful dish featuring juicy, roasted cherry tomatoes and caramelized garlic served with creamy burrata and crusty bread. Perfect as an appetizer or light meal.


Ingredients

  • 800g cherry tomatoes
  • 1 bulb of garlic
  • 3 tbsp olive oil
  • Salt, to taste
  • Cracked black pepper, to taste
  • 2 sprigs of thyme
  • 2 sprigs of rosemary
  • 1 ball of burrata
  • Fresh basil leaves, for garnish
  • Crusty bread, to serve

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Place cherry tomatoes on a baking dish.
  3. Cut the top off a garlic bulb to expose the cloves and place it in the dish with tomatoes.
  4. Drizzle olive oil over the tomatoes and garlic.
  5. Season with salt, cracked black pepper, and add thyme and rosemary sprigs.
  6. Roast in the oven for 45 minutes or until tomatoes are blistered and garlic is caramelized.
  7. Remove from oven and let cool slightly.
  8. Squeeze the roasted garlic cloves out of their skins and mix with the tomatoes.
  9. Plate the roasted tomatoes and garlic, and place the burrata on top.
  10. Garnish with fresh basil leaves and serve with crusty bread.

Notes

  • Use ripe cherry tomatoes for the best flavor.
  • Make sure to roast the garlic long enough to caramelize it fully.
  • Serve immediately while warm for the best texture and taste.
