Description
This Roasted Tomato and Garlic Burrata is a simple yet flavorful dish featuring juicy, roasted cherry tomatoes and caramelized garlic served with creamy burrata and crusty bread. Perfect as an appetizer or light meal.
Ingredients
- 800g cherry tomatoes
- 1 bulb of garlic
- 3 tbsp olive oil
- Salt, to taste
- Cracked black pepper, to taste
- 2 sprigs of thyme
- 2 sprigs of rosemary
- 1 ball of burrata
- Fresh basil leaves, for garnish
- Crusty bread, to serve
Instructions
- Preheat the oven to 180°C (350°F).
- Place cherry tomatoes on a baking dish.
- Cut the top off a garlic bulb to expose the cloves and place it in the dish with tomatoes.
- Drizzle olive oil over the tomatoes and garlic.
- Season with salt, cracked black pepper, and add thyme and rosemary sprigs.
- Roast in the oven for 45 minutes or until tomatoes are blistered and garlic is caramelized.
- Remove from oven and let cool slightly.
- Squeeze the roasted garlic cloves out of their skins and mix with the tomatoes.
- Plate the roasted tomatoes and garlic, and place the burrata on top.
- Garnish with fresh basil leaves and serve with crusty bread.
Notes
- Use ripe cherry tomatoes for the best flavor.
- Make sure to roast the garlic long enough to caramelize it fully.
- Serve immediately while warm for the best texture and taste.
