Description
A creamy roasted garlic basil cheese dip blended with pecans and herbs, served with crisp homemade gluten-free basil crackers made from almond flour. This savory snack is rich, aromatic, and perfect for dipping.
Ingredients
- 2 large garlic cloves
- 6 fresh basil leaves
- 1 cup raw pecans
- 1/3 cup olive oil
- 8 oz cream cheese (softened)
- 1/2 cup sharp cheddar cheese (shredded or parmesan cheese)
- Black pepper to taste
- 2 cups blanched almond flour
- 3/4 tsp fine Himalayan salt
- 1 tbsp dried or fresh basil
- 1 tbsp olive oil
- 2 tbsp water
Instructions
- Preheat oven to 350°F (175°C).
- Roast the garlic cloves in a small amount of olive oil until soft and fragrant.
- Chop the fresh basil leaves.
- In a blender or food processor, combine roasted garlic, fresh basil, raw pecans, olive oil, cream cheese, shredded cheddar (or parmesan), and black pepper. Process until smooth to make the dip.
- In a bowl, combine almond flour, Himalayan salt, and dried or fresh basil.
- In a separate bowl, whisk together olive oil and water.
- Stir the wet ingredients into the almond flour mixture until thoroughly combined into a dough.
- Roll the dough into a ball and press it between two sheets of parchment paper to about 1/8 inch thickness.
- Remove the top piece of parchment paper.
- Transfer the bottom parchment sheet with the rolled dough onto a baking sheet.
- Cut the dough into 2-inch squares using a knife or pizza cutter.
- Bake for 9–11 minutes, until the crackers are lightly golden.
- Let the crackers cool on the baking sheet for about 20 minutes to crisp.
- Serve the roasted garlic basil cheese dip with the cooled gluten-free basil crackers.
Notes
- Parmesan cheese can be used instead of cheddar for a sharper flavor.
- If the dough feels too dry, add a small splash of water to help it come together.
- Store leftover crackers in an airtight container for up to 3 days.
- The dip can be refrigerated for up to 3 days and stirred before serving.
