Description

A creamy roasted garlic basil cheese dip blended with pecans and herbs, served with crisp homemade gluten-free basil crackers made from almond flour. This savory snack is rich, aromatic, and perfect for dipping.


Ingredients

  • 2 large garlic cloves
  • 6 fresh basil leaves
  • 1 cup raw pecans
  • 1/3 cup olive oil
  • 8 oz cream cheese (softened)
  • 1/2 cup sharp cheddar cheese (shredded or parmesan cheese)
  • Black pepper to taste
  • 2 cups blanched almond flour
  • 3/4 tsp fine Himalayan salt
  • 1 tbsp dried or fresh basil
  • 1 tbsp olive oil
  • 2 tbsp water

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Roast the garlic cloves in a small amount of olive oil until soft and fragrant.
  3. Chop the fresh basil leaves.
  4. In a blender or food processor, combine roasted garlic, fresh basil, raw pecans, olive oil, cream cheese, shredded cheddar (or parmesan), and black pepper. Process until smooth to make the dip.
  5. In a bowl, combine almond flour, Himalayan salt, and dried or fresh basil.
  6. In a separate bowl, whisk together olive oil and water.
  7. Stir the wet ingredients into the almond flour mixture until thoroughly combined into a dough.
  8. Roll the dough into a ball and press it between two sheets of parchment paper to about 1/8 inch thickness.
  9. Remove the top piece of parchment paper.
  10. Transfer the bottom parchment sheet with the rolled dough onto a baking sheet.
  11. Cut the dough into 2-inch squares using a knife or pizza cutter.
  12. Bake for 9–11 minutes, until the crackers are lightly golden.
  13. Let the crackers cool on the baking sheet for about 20 minutes to crisp.
  14. Serve the roasted garlic basil cheese dip with the cooled gluten-free basil crackers.

Notes

  • Parmesan cheese can be used instead of cheddar for a sharper flavor.
  • If the dough feels too dry, add a small splash of water to help it come together.
  • Store leftover crackers in an airtight container for up to 3 days.
  • The dip can be refrigerated for up to 3 days and stirred before serving.
