Description
Golden, crispy grilled cheese sandwiches layered with sweet roasted garlic and a trio of melted cheeses. Rich, comforting, and packed with deep caramelized flavor.
Ingredients
- 2 large bulbs of garlic
- 8 medium slices of bread (Tiger bread, Sourdough, etc.)
- 1 cup (100g) Cheddar cheese, grated
- 1 cup (100g) Gruyere cheese, grated
- 1 cup (100g) Mozzarella cheese, grated
- Drizzle of olive oil (about 1 tsp per bulb)
- Pinch of salt
- Butter, as needed
Instructions
- Preheat oven to 180C/350F. Slice off the top of each garlic bulb to expose the cloves. Drizzle each bulb with olive oil.
- Wrap each bulb individually in foil and roast for 45–60 minutes, until tender, deep golden, and caramelized.
- Allow garlic to cool slightly, then peel away outer layers and squeeze cloves onto a board. Sprinkle with salt and mash with a fork until smooth.
- Spread butter on one side of each slice of bread and roasted garlic on the other side. On four slices (garlic side up), evenly divide the cheeses. Top with remaining slices, butter side facing out.
- Heat a pan over medium heat. Cook sandwiches until both sides are crisp and golden and the cheese is melted, flipping carefully. Cook in batches if needed. Serve warm.
Notes
- You can substitute cheeses with Monterey Jack, Emmental, or Fontina for a different flavor profile.
- Roasted garlic can be made ahead and stored in the refrigerator for up to 3 days.
- Cook on medium to medium-low heat to ensure the cheese melts fully without burning the bread.
- Serve with tomato soup or a simple green salad.
