Description

This roasted lemon herb chicken is a flavorful and juicy main dish seasoned with fresh herbs, garlic, and lemon. Perfect for family dinners or special occasions, it delivers crispy skin and tender meat.


Ingredients

  • 1 (3 pound) whole chicken, giblets removed
  • ½ cup butter or margarine
  • 1 tablespoon salt
  • 1 tablespoon ground black pepper
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried basil
  • 1 tablespoon dried parsley
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a small saucepan over medium heat, melt butter or margarine. Remove from heat and stir in salt, pepper, rosemary, basil, parsley, lemon juice, and garlic.
  3. Place chicken in a roasting pan and brush with butter mixture. Reserve some of the mixture for basting.
  4. Bake chicken uncovered in the preheated oven for 1 hour and 15 minutes, or until the internal temperature reaches 165 degrees F (74 degrees C) and juices run clear.
  5. Baste chicken occasionally with the remaining butter mixture while roasting.
  6. Remove from oven, cover with foil, and let rest for 10 minutes before serving.

  • You can substitute fresh herbs for dried herbs if desired.
  • Letting the chicken rest before carving helps retain its juices.
  • Use a meat thermometer to ensure the chicken is fully cooked.
