Description

This Roasted Red Pepper Alfredo is a rich and creamy pasta dish made by blending jarred Alfredo sauce with roasted red peppers, garlic, and basil olive oil, then tossing it with gluten-free penne and perfectly seasoned pan-fried shrimp for a flavorful, family-friendly meal.


Ingredients

  • 1 (15 oz) jar Alfredo sauce
  • 1 cup roasted red peppers, drained
  • 1/2 cup shredded mozzarella cheese
  • 1 tablespoon basil olive oil
  • 2 teaspoons minced garlic
  • 12 oz gluten-free penne pasta
  • 1 lb large shrimp, peeled and deveined
  • 1 teaspoon paprika

Instructions

  1. Bring a large pot of salted water to a boil and cook the gluten-free penne according to package directions until al dente. Drain and set aside.
  2. In a food processor or blender, combine the jarred Alfredo sauce, roasted red peppers, basil olive oil, and minced garlic. Blend until smooth and creamy.
  3. In a medium bowl, toss the shrimp with paprika, oregano, dried basil, and salt until evenly coated.
  4. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the seasoned shrimp and cook for about 2 minutes per side, or until pink and slightly curled.
  5. Reduce heat to medium-low and pour the blended roasted red pepper Alfredo sauce into the skillet with the shrimp. Stir in the shredded mozzarella cheese and cook until melted and fully incorporated.
  6. Add the cooked pasta to the skillet and gently toss until evenly coated with the sauce and shrimp.
  7. Serve hot, optionally garnished with extra mozzarella or fresh herbs.
