Ingredients
- 1 (15 oz) jar Alfredo sauce
- 1 cup roasted red peppers, drained
- 1/2 cup shredded mozzarella cheese
- 1 tablespoon basil olive oil
- 2 teaspoons minced garlic
- 12 oz gluten-free penne pasta
- 1 lb large shrimp, peeled and deveined
- 1 teaspoon paprika

Instructions
- Bring a large pot of salted water to a boil and cook the gluten-free penne according to package directions until al dente. Drain and set aside.
- In a food processor or blender, combine the jarred Alfredo sauce, roasted red peppers, basil olive oil, and minced garlic. Blend until smooth and creamy.
- In a medium bowl, toss the shrimp with paprika, oregano, dried basil, and salt until evenly coated.
- Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the seasoned shrimp and cook for about 2 minutes per side, or until pink and slightly curled.
- Reduce heat to medium-low and pour the blended roasted red pepper Alfredo sauce into the skillet with the shrimp. Stir in the shredded mozzarella cheese and cook until melted and fully incorporated.
- Add the cooked pasta to the skillet and gently toss until evenly coated with the sauce and shrimp.
- Serve hot, optionally garnished with extra mozzarella or fresh herbs.
