Description

These Roasted Sesame Sweet Potatoes are a flavorful and healthy side dish featuring crispy roasted sweet potatoes tossed in a savory sesame oil and soy sauce glaze, topped with sesame seeds and green onions.


Ingredients

  • 2 pounds sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon sesame oil
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon rice vinegar
  • 2 teaspoons brown sugar
  • 1 teaspoon sesame seeds, toasted
  • 2 green onions, thinly sliced

Instructions

  1. Preheat oven to 425°F. Line a large baking sheet with parchment paper.
  2. In a large bowl, toss the sweet potato cubes with olive oil, salt, and pepper.
  3. Spread the sweet potatoes in an even layer on the prepared baking sheet.
  4. Roast for 25-30 minutes, flipping halfway through, until golden brown and tender.
  5. While the potatoes roast, whisk together sesame oil, soy sauce, rice vinegar, and brown sugar in a small bowl.
  6. Transfer the roasted sweet potatoes to a serving bowl and drizzle with the sesame-soy glaze.
