Description

This Roasted Sweet Potato Chickpea Salad is a hearty and flavorful plant-based dish featuring spiced roasted sweet potatoes and chickpeas, tossed with fresh greens and a creamy tahini dressing. Perfect for meal prep, lunches, or a light dinner.


Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 (15 oz) can chickpeas, drained, rinsed, and patted dry
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 5 oz mixed greens (arugula, spinach, or spring mix)
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro or parsley, chopped
  • 1/4 cup tahini
  • 1 tbsp maple syrup
  • 1 tbsp lemon juice
  • 12 tbsp warm water (to thin dressing)
  • Salt and pepper to taste (for dressing)

Instructions

  1. Preheat the oven to 400°F (204°C) and line a baking sheet with parchment paper.
  2. In a bowl, toss the cubed sweet potatoes and chickpeas with olive oil, paprika, cumin, salt, and pepper until evenly coated.
  3. Spread the mixture on the baking sheet in a single layer and roast for 25–30 minutes, tossing halfway through, until golden and tender.
  4. While vegetables roast, prepare the dressing by whisking together tahini, maple syrup, lemon juice, and warm water until smooth. Season with salt and pepper to taste.
  5. In a large bowl or on a serving platter, layer the mixed greens, roasted sweet potatoes, chickpeas, red onion, and herbs.
  6. Drizzle with the tahini dressing just before serving. Toss gently to combine.

Notes

  • Customize with other greens or roasted veggies if desired.
  • Dressing can be made ahead and stored in the fridge for up to 1 week.
  • To make it a meal, serve with quinoa, rice, or add avocado.
  • For extra crunch, sprinkle with toasted seeds or nuts.
