Description

Ingredients

  • 2 pounds Roma tomatoes, halved
  • 1 medium yellow onion, quartered
  • 67 garlic cloves
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon crushed red pepper (optional)
  • 2 cups vegetable broth
  • 1 cup fresh basil leaves, packed
  • 1 tablespoon tomato paste
  • 1 teaspoon sugar (optional)
  • 1/4 cup full-fat coconut milk or heavy cream (optional for creaminess)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place halved Roma tomatoes, quartered onions, and garlic cloves on the baking sheet. Drizzle with olive oil and season with salt, black pepper, oregano, thyme, and crushed red pepper (if using). Toss to coat.
  3. Roast in the preheated oven for 35-40 minutes, until the tomatoes are soft and slightly charred.
  4. Transfer the roasted vegetables to a large pot. Add the vegetable broth, fresh basil leaves, tomato paste, and sugar (if using).
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for 10-15 minutes.
  6. Use an immersion blender to blend the soup until smooth, or transfer in batches to a blender and blend carefully.
  7. Stir in coconut milk or cream if a creamier texture is desired. Adjust seasoning to taste.
  8. Serve hot, garnished with fresh basil or a drizzle of cream if desired.
