Description

This rosemary orange marinated chicken is full of fresh, vibrant flavor from citrus and herbs. It’s an easy and delicious way to prepare chicken for grilling or roasting.


Ingredients

  • 1 orange (zest and juice)
  • 1 lemon (juice only)
  • 1 sprig rosemary (leaves only, finely chopped)
  • 1 clove garlic (crushed or finely chopped)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 chicken breasts (or other chicken pieces)

Instructions

  1. Grate the zest from the orange and place in a bowl or dish large enough to marinate the chicken.
  2. Juice the orange and lemon, and add both juices to the bowl with the zest.
  3. Add the chopped rosemary, crushed garlic, olive oil, salt, and pepper. Mix everything together well.
  4. Add the chicken to the marinade and turn to coat well. Cover and refrigerate for at least an hour, or up to overnight.
  5. Preheat the grill or oven when ready to cook. If grilling, cook the chicken for around 5-7 minutes per side depending on thickness. If roasting, cook in a preheated oven at 400°F (200°C) for around 20-25 minutes or until cooked through.
  6. Let the chicken rest a few minutes before serving.

Notes

  • Marinating overnight enhances flavor even more.
  • You can use thighs or drumsticks instead of breasts; adjust cooking time as needed.
  • This marinade also works well with pork or tofu.
