Description
This rosemary orange marinated chicken is full of fresh, vibrant flavor from citrus and herbs. It’s an easy and delicious way to prepare chicken for grilling or roasting.
Ingredients
- 1 orange (zest and juice)
- 1 lemon (juice only)
- 1 sprig rosemary (leaves only, finely chopped)
- 1 clove garlic (crushed or finely chopped)
- 2 tbsp olive oil
- Salt and pepper to taste
- 2 chicken breasts (or other chicken pieces)
Instructions
- Grate the zest from the orange and place in a bowl or dish large enough to marinate the chicken.
- Juice the orange and lemon, and add both juices to the bowl with the zest.
- Add the chopped rosemary, crushed garlic, olive oil, salt, and pepper. Mix everything together well.
- Add the chicken to the marinade and turn to coat well. Cover and refrigerate for at least an hour, or up to overnight.
- Preheat the grill or oven when ready to cook. If grilling, cook the chicken for around 5-7 minutes per side depending on thickness. If roasting, cook in a preheated oven at 400°F (200°C) for around 20-25 minutes or until cooked through.
- Let the chicken rest a few minutes before serving.
Notes
- Marinating overnight enhances flavor even more.
- You can use thighs or drumsticks instead of breasts; adjust cooking time as needed.
- This marinade also works well with pork or tofu.
