Description

Rotel Tacos are a quick and flavorful twist on traditional tacos, made with seasoned ground beef, Rotel tomatoes and chilies, and your favorite toppings.


Ingredients

  • 1 pound ground beef
  • 1 (10 ounce) can Rotel tomatoes and green chilies, undrained
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 12 taco shells
  • Shredded lettuce (for topping)
  • Shredded cheese (for topping)
  • Sour cream (for topping)
  • Guacamole (for topping)

Instructions

  1. In a large skillet, brown the ground beef over medium heat. Drain off any excess grease.
  2. Stir in the Rotel tomatoes and green chilies, taco seasoning mix, and 1/2 cup water.
  3. Bring to a boil, then reduce heat and simmer for 10 minutes, or until the beef is cooked through and the sauce has thickened.
  4. Spoon the beef mixture into the taco shells.
  5. Top with your favorite taco toppings, such as shredded lettuce, shredded cheese, sour cream, and guacamole.
  6. Serve and enjoy!

Notes

  • You can use ground turkey or chicken as a leaner alternative to beef.
  • For added heat, use the hot variety of Rotel or add chopped jalapeños.
