Ingredients

  • 11 ounces vanilla wafers, crushed (about 2 ¾ cups crumbs)
  • 1 cup powdered sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1 cup finely chopped pecans
  • ½ cup spiced rum
  • 2 tablespoons light corn syrup
  • Powdered sugar (for coating)

Instructions

  1. In a large bowl, combine crushed vanilla wafers, powdered sugar, cocoa powder, and chopped pecans. Mix until evenly combined.
  2. Add the spiced rum and light corn syrup to the dry ingredients and mix well until the mixture holds together when pressed.
  3. Using a small cookie scoop or spoon, scoop out portions and roll into 1-inch balls using your hands.
  4. Roll each ball in powdered sugar to coat completely.
  5. Place the coated balls on a baking sheet lined with parchment paper.
