Ingredients

  • 3 large heads of garlic
  • 1 large onion, diced
  • 2 tablespoons olive oil
  • 6 cups vegetable or chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper, to taste
  • 4 slices day-old rustic bread (such as French baguette or sourdough)
  • 1/2 cup heavy cream (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C). Slice the tops off the garlic heads, drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 30-35 minutes until soft and golden.
  2. In a large pot, heat 1 tablespoon olive oil over medium heat. Add diced onion and sauté until translucent, about 5-7 minutes.
  3. Squeeze the roasted garlic cloves out of their skins and add to the pot with the onions. Stir to combine.
  4. Add the broth, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
  5. Tear the bread into pieces and add to the soup. Cook for another 5 minutes, allowing the bread to soften.
  6. Use an immersion blender to puree the soup until smooth and creamy (or carefully blend in batches).
  7. Stir in heavy cream if using, and simmer for another 2-3 minutes.
  8. Serve hot, garnished with chopped fresh parsley and additional bread if desired.
