Ingredients
- 3 large heads of garlic
- 1 large onion, diced
- 2 tablespoons olive oil
- 6 cups vegetable or chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and black pepper, to taste
- 4 slices day-old rustic bread (such as French baguette or sourdough)
- 1/2 cup heavy cream (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C). Slice the tops off the garlic heads, drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 30-35 minutes until soft and golden.
- In a large pot, heat 1 tablespoon olive oil over medium heat. Add diced onion and sauté until translucent, about 5-7 minutes.
- Squeeze the roasted garlic cloves out of their skins and add to the pot with the onions. Stir to combine.
- Add the broth, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
- Tear the bread into pieces and add to the soup. Cook for another 5 minutes, allowing the bread to soften.
- Use an immersion blender to puree the soup until smooth and creamy (or carefully blend in batches).
- Stir in heavy cream if using, and simmer for another 2-3 minutes.
- Serve hot, garnished with chopped fresh parsley and additional bread if desired.
