Description

These Saucy Wet Burritos are filled with a savory beef and bean mixture, topped with enchilada sauce and melted cheese, and served with fresh toppings for a satisfying, flavorful meal.

Ingredients

  • 1 pound ground beef
  • 1 can refried beans
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1/2 cup water
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup enchilada sauce
  • 1 cup sour cream
  • 1 tomato, diced
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground beef, chopped onion, and minced garlic until the beef is browned. Drain any excess fat.
  3. Stir in the refried beans, taco seasoning, and water. Cook the mixture until heated through and well combined.
  4. Warm the flour tortillas in the microwave for easier handling.
  5. Spoon a portion of the bean and beef mixture onto each tortilla, then sprinkle with shredded cheddar cheese. Roll up the tortillas tightly.
  6. Place the rolled burritos in a baking dish. Pour the enchilada sauce over them and sprinkle with additional shredded cheese.
  7. Bake the burritos in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
  8. Serve the baked burritos with a dollop of sour cream, diced tomatoes, and a sprinkle of chopped cilantro.
  9. Enjoy your delicious homemade beef and bean burritos!

Notes

  • Warming the tortillas helps prevent cracking during rolling.
  • You can substitute ground turkey or chicken for a lighter version.
  • Use a spicy enchilada sauce for an extra kick.
  • Top with avocado or jalapeños for added flavor.
