Ingredients
4 large eggs
1 tablespoon milk
1 tablespoon butter
1/2 pound breakfast sausage (cooked and crumbled)
4 flour tortillas (10-inch size)
1 cup shredded cheddar cheese
Salt and pepper to taste
Instructions
- Start by heating a large skillet over medium heat. Add the breakfast sausage and cook until browned and crumbled, about 5-7 minutes. Once cooked, remove from the skillet and set aside.
 - In a separate bowl, whisk together the eggs, milk, salt, and pepper.
 - In the same skillet, melt the butter over medium-low heat. Add the egg mixture and gently scramble the eggs until fully cooked, about 3-4 minutes. Remove from the skillet and set aside.
 - Warm the tortillas in the same skillet for about 10 seconds per side until soft and pliable.
 - To assemble, lay a tortilla flat on a clean surface. Spoon some scrambled eggs, cooked sausage, and a sprinkle of cheese in the center of the tortilla.
 - Carefully roll up the tortilla, folding in the sides as you go to secure the filling inside.
 - Repeat with the remaining tortillas and ingredients.
 - Serve immediately, or store for later.
