Ingredients

4 large eggs

1 tablespoon milk

1 tablespoon butter

1/2 pound breakfast sausage (cooked and crumbled)

4 flour tortillas (10-inch size)

1 cup shredded cheddar cheese

Salt and pepper to taste


Instructions

  1. Start by heating a large skillet over medium heat. Add the breakfast sausage and cook until browned and crumbled, about 5-7 minutes. Once cooked, remove from the skillet and set aside.
  2. In a separate bowl, whisk together the eggs, milk, salt, and pepper.
  3. In the same skillet, melt the butter over medium-low heat. Add the egg mixture and gently scramble the eggs until fully cooked, about 3-4 minutes. Remove from the skillet and set aside.
  4. Warm the tortillas in the same skillet for about 10 seconds per side until soft and pliable.
  5. To assemble, lay a tortilla flat on a clean surface. Spoon some scrambled eggs, cooked sausage, and a sprinkle of cheese in the center of the tortilla.
  6. Carefully roll up the tortilla, folding in the sides as you go to secure the filling inside.
  7. Repeat with the remaining tortillas and ingredients.
  8. Serve immediately, or store for later.
