Description
A hearty sausage, spinach, and tortellini soup simmered with tomatoes, white beans, and Italian herbs. This comforting one-pot meal is flavorful, filling, and perfect for a cozy dinner.
Ingredients
- 2 tbsp olive oil
- 1.5 cups yellow onion, diced (about ½ a large onion)
- 3 cloves garlic, minced
- 1 lb turkey sausage
- 1 tbsp Italian spice blend
- 1 can herbs and spices diced tomatoes (756 mL)
- 1 can white navy beans (540 mL, rinsed and drained)
- 900 ml vegetable broth
- 3 cups frozen cheese tortellini
- 6 cups spinach (1 x 284 g bag)
- Salt and black pepper, to taste
- Parmesan cheese, for topping
Instructions
- Heat olive oil in a large pot over medium-high heat. Add diced onion and garlic and sauté for about 5 minutes, stirring frequently, until fragrant and the onion becomes translucent.
- Slice the sausage casings lengthwise and remove the sausage meat. Add the meat to the pot with the onions and garlic. Cook for about 5 minutes, breaking it apart with a spoon, until fully cooked and no longer pink. Stir in the Italian spice blend.
- Add the diced tomatoes with their juices, navy beans, and vegetable broth. Stir well and bring the soup to a simmer. Cook for about 10 minutes.
- Stir in the spinach and frozen tortellini. If needed, add the spinach in batches as it wilts. Cover and simmer for about 10 minutes, stirring occasionally, until the tortellini is tender and the spinach has wilted.
- Taste and adjust seasoning with salt and black pepper as desired. Serve hot topped with grated Parmesan cheese.
Notes
- Fresh spinach can be used instead of frozen bagged spinach if preferred.
- For extra richness, finish the soup with additional grated Parmesan or a drizzle of olive oil.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- If the soup thickens after storage, add a splash of broth when reheating.
