Description
These sausage-stuffed mini sweet peppers are a delicious, low-carb appetizer or snack, perfect for parties or game day. Made with just a few ingredients, they are easy to prepare and packed with flavor.
Ingredients
- 1 lb. ground Italian sausage (mild or hot)
- 8 oz. cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1 lb. mini sweet peppers
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a skillet over medium heat, cook the Italian sausage until fully browned. Drain any excess grease and let cool slightly.
- In a medium bowl, combine the cooked sausage, cream cheese, and Parmesan cheese. Mix until well combined.
- Cut the mini sweet peppers in half lengthwise and remove the seeds.
- Fill each pepper half with the sausage and cheese mixture using a spoon.
- Place the stuffed peppers on the prepared baking sheet.
- Bake for 20 minutes or until the peppers are tender and the filling is heated through.
- Serve warm and enjoy!

- You can prepare the filling a day ahead and refrigerate until ready to use.
- Use spicy sausage if you prefer more heat.
