Ingredients

  • 8 ounces Cavatappi noodles (Spiral-shaped pasta)
  • 1 pound Large shrimp (Fresh and deveined)
  • 2 tablespoons Blackened seasoning (For seasoning the shrimp)
  • 2 tablespoons Unsalted butter
  • 1 cup Heavy cream
  • 2 tablespoons Tomato paste
  • 1/2 cup Sour cream
  • 1/2 cup Grated parmesan cheese (Freshly grated for best flavor)
  • 1 cup Sweet corn (Drained)
  • 2 tablespoons Green onion (Chopped for garnish)

Instructions

  1. Bring a pot of salted water to a rolling boil and add the cavatappi noodles. Cook al dente according to package directions, about 8–9 minutes, until tender yet firm.
  2. While the noodles are cooking, sprinkle the blackened seasoning evenly over the raw, deveined shrimp, ensuring each piece is well-coated.
  3. In a large skillet over medium-high heat, melt the butter. Once sizzling, add the shrimp in a single layer and cook for 4–6 minutes, flipping halfway through, until pink and cooked through. Transfer the shrimp to a plate and set aside.
  4. In the same skillet over medium heat, pour in the heavy cream. Bring to a low simmer, scraping the browned bits from the bottom of the pan for added flavor.
  5. Reduce the heat to low and stir in the tomato paste, sour cream, and grated parmesan cheese. Mix until the cheese is melted and the sauce is smooth and creamy.
  6. Add the cooked cavatappi, cooked shrimp, and drained sweet corn to the sauce. Gently toss until everything is evenly coated.
  7. Garnish with freshly chopped green onion and serve warm.
