Description

This savory Mediterranean baked fish is light, flavorful, and perfect for a quick dinner. Tender white fish is baked with tomatoes, olives, garlic, and herbs for a fresh and vibrant meal.


Ingredients

  • 1 pound white fish (cod, haddock, or tilapia)
  • 2 tablespoons olive oil
  • 2 cups cherry tomatoes
  • 1/2 cup Kalamata olives
  • 3 cloves garlic, minced
  • 1 medium red onion, thinly sliced
  • 1 medium lemon, sliced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1/2 teaspoon red pepper flakes
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a baking dish with 1 tablespoon of olive oil.
  2. Arrange the fish fillets in the greased dish and drizzle with the remaining olive oil. Season with salt, black pepper, oregano, and thyme.
  3. Scatter cherry tomatoes, sliced olives, minced garlic, and red onion evenly over the fish.
  4. Top with lemon slices and sprinkle with red pepper flakes if desired.
  5. Bake uncovered for 15 to 20 minutes, or until the fish is opaque and flakes easily with a fork.
  6. Garnish with freshly chopped parsley and serve warm.

Notes

  • Salmon or snapper can be substituted for white fish.
  • Sun-dried or diced tomatoes may replace cherry tomatoes.
  • Green or black olives can be used instead of Kalamata.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
