Ingredients
- 6 scallions, trimmed and sliced into 2-inch pieces
- 1/2 cup neutral oil (like canola or vegetable oil)
- 8 ounces dried wheat noodles (like lo mein or spaghetti)
- 2 tablespoons soy sauce
- 1 teaspoon dark soy sauce
- 1/2 teaspoon sugar
- Salt, to taste
Instructions
- Bring a large pot of water to a boil and cook the noodles according to package instructions. Drain and set aside.
- Meanwhile, in a medium saucepan, heat the oil over medium heat.
- Add the scallions and cook, stirring occasionally, until they are browned and crispy, about 10–15 minutes. Reduce heat if scallions brown too quickly.
- Remove the crispy scallions with a slotted spoon and set aside. Reserve the scallion-infused oil.
- In a large bowl, whisk together soy sauce, dark soy sauce, sugar, and a pinch of salt.
- Add the hot scallion oil to the soy sauce mixture and stir to combine.
- Add the drained noodles and toss until evenly coated.
- Serve topped with the crispy scallions.
Notes
- Use any neutral oil, but avoid olive oil as its flavor may overpower the scallions.
- Dark soy sauce adds color and depth, but can be omitted if unavailable.
- Adjust seasoning to taste—add chili oil or vinegar for extra flavor.
