Description

This sheet pan salmon with spicy garlic kale is a healthy, flavorful, and quick weeknight dinner that comes together in under 30 minutes. The salmon is perfectly roasted and served alongside crispy, garlicky kale with a hint of spice.


Ingredients

  • 4 salmon fillets (about 6 oz each)
  • 1 large bunch of curly kale, stems removed and torn into bite-sized pieces
  • 3 tablespoons olive oil, divided
  • 4 garlic cloves, minced
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Salt, to taste
  • Black pepper, to taste
  • Lemon wedges, for serving

Instructions

  1. Preheat the oven to 425°F (220°C) and line a sheet pan with parchment paper.
  2. In a large bowl, toss the kale with 2 tablespoons of olive oil, minced garlic, red pepper flakes, salt, and black pepper until evenly coated.
  3. Spread the kale evenly on the prepared sheet pan, leaving space in the center for the salmon.
  4. Place the salmon fillets in the center of the pan. Drizzle with the remaining 1 tablespoon of olive oil and season with salt and black pepper.
  5. Roast in the oven for 12–15 minutes, or until the salmon is cooked through and the kale is crispy on the edges.
  6. Serve immediately with lemon wedges on the side.

  • For extra crispy kale, spread it out in a single layer and avoid overcrowding the pan.
  • You can substitute spinach or Swiss chard for kale, but they may cook faster.
